Struggling to find a 11 speed long cage RD for my road bike running a 11-32 casette and was thinking if a MTB RD will work.

Any recommendations on which MTB RD will work?

To my understanding, although I have never tried to do it myself, the current generation Shimano road and MTB cable pull ratios are different and therefore components are not cross compatible. 

You can use any Shimano 11 speed road RD that is mid cage for an 11/32.  Quick way to tell if it is mid cage from a picture is if you can easily fit a third pulley wheel in between the two mounted on the RD it is mid.  If not it is short.

I am using a 32/11 cassette on my Ultegra R8000 mechanical groupset with a normal cage (not a long cage) rear derailleur without any issues. Just adjust the B screw. In my case it was not even needed to replace the B screw with a longer one. The same setup also worked with 105 (5800 series) on one of my previous bikes.

the bike I have on the trainer has a Shimano XT 11 Speed MTB derailleur and shifter with a shimano 11 speed road cassette. It shifts with no issues at all.

This is not supposed to work, as Diesel indicates, I have always believed it should not work properly.
