On the subject of matt bikes, how do you keep a matt bike matt and stop it going glossy from cleaning ?

And if its already going glossy how do you get it matt again ?

It's more effort than a gloss bike :P

It comes down to care and using the correct cleaning products. Especially when it comes to the polish, using general/normal polish with remove the matt look. Should you be taking your bike to your LBS regularly, also make sure they use the correct products. 

Past 3 bike have been matt and remained matt by being heedful when cleaning. 

Alternative option is to wrap your bike, would also protect the finish.

Matt is just a clear coat so you can have the bike clear coated again.

but I dont think it needs to be clear coted again.

I've been cleaning it with car shampoo, the wash and wax kind, I suspect the wax part of that wash and wax has built up a little giving the bike a glossy look. I'm thinking perhaps some way to clean off the "wax" and then clean with something else going forward.

 

The last couple of washes I've used either just tap water or a weak degreaser mix to clean the bike. I'm hoping that continuing to do this will slowly clean away the "wax".

Wipe down thoroughly with isopropyl alcohol to help dissolve the wax buildup. Car detail places will also sell a product to clean paint with before they apply ceramic coatings. Sunlight liquid is another option.

Then consider ceramic coating the frame. 

For washing you can use a car shampoo but without the fancy additives.
