Im struggling on hills, like really... Im currently riding Shimano 105 11-25, can i go 11-28 or better 11-32 using the standard RD?

What about a compact crank? 50/34? or a granny gear in front?

I'm 100kgs and not the strongest, and a standard crank with 11:28 has been good enough for Jhb hills. You'll be fine

I run 11-27 and it's good up just about any hill. U can find 12-30 though

Shimano short cage can only go to 28 accourding to their manual,  but I have read all over the net guys running the 12/30 without any issues, dont think you'll be able to go 32 though

Your bike 9 or 10 spd?

 

Consider going triple up front or fit a MTB RD and cassette at back.

 

I gather you can use a 9spd MTB RD with 10 spd shifters as it is not indexed, a 10spd RD will not work as it has a different pull ratio.

@Shaper im running 10sp... I think im going to try either 11-28 or 12-30..seams to be the easiest step. No need to change the RD..

JHB is flat compared to where we live here in Westville/Kloof/Hillcrest/TheValley.

 

I can easily do 2000m climbing on a 100km local ride. I can do 1300m climbing on a ride without cycling more than 10km radius from my house.

 

I have a compact 50/34 and a selection of cassettes depending on what riding I'm going to do. 11-23 if visiting family in JHB and then 11-28 if I'm going to drop into The Valley here in KZN (there's some serious TDF stuff in those mountains).
