Black Bean Chocolate Brownies

Very good, many thanks for sharing!

As an aside, have you tried the recipe without the sweetener?

I only had them for the first time on Saturday. I'm not one of those people who have a problem with having artificial sweeteners like Xylitol in moderation. But feel free to have a go and leave it out when you cook. I'll be interested to hear how it comes out.

OK I've just received the recipe....

Black Bean Chocolate Brownies

Ingredients

·         1 can of black beans, drained and rinsed very well

·         2 large eggs

·         5 Tbsp cocoa powder

·         0.25 tsp salt

·         4 Tbsp organic coconut oil, melted

·         2 tsp of baking powder

·         3 Tbsp of Xylitol (or alternative sweetener of choice)

·         1 Tbsp of pure vanilla extract

·         0.5 to 0.75 cups of chopped almonds (115-140g)

·         Dark chocolate (as much as you think you need)

Method

  1. Preheat oven to 180 degrees.
  2. Combine all ingredients except almonds in a good food processor, and blend until completely smooth. Really blend well (A proper food processor is best. Can be done with a handheld blender, but it’s a lot of work).
  3. Add nuts (except 1 Tbsp) and gently fold in, then pour into a greased 8×8 pan.
  4. Cook for 15 - 18 minutes, remove and then add topping of melted dark chocolate, then let cool at least 10 minutes before trying to cut.
  5. If they still look a bit undercooked, you can place them in the fridge overnight and they will magically firm up!
  6. Cut into squares or rectangles - however big you'd like them.

Well, the September challenge of no sugar, no bread went well & I'm glad I went through with it.

For the most part sugar cravings are all but gone. I will try something sweet this weekend...perhaps some of tombeej's brownies & ice cream.

I'll probably have some bread (home made burgers & chips tonight), but will continue to cut sugar (except fresh fruit) from my diet.

It's been worth it...

Let us know how you feel tomorrow after the bread and all that starch. Might feel like you've got a bellyful of cement. Some folks get seriously bloated and uncomfortable after eating bread again after a layoff. My missus is like that.

I know where you can buy

Ja I reckon that is one thing I would spend money on buying rather than making myself.

Cauliflower mash - easy

Cauliflower rice - easy

Cauliflower pizza base - mission

By the way the cauliflower wraps from that evil shop are pretty good. More lika a roti though.

Nothing wrong with a roti.

Triple chip cheese from Johnny's.
