11 November is a bit close, but what the heck .... lets try make 11 Novemebr.

What are the rides around Paarl that would be easy for the family and those with more skills can head off as well ?

Paarl DH Lines are great and have large open spaces on which to park yourselves. It's also outside the gates.

Yeah, not sure I'd recommend a DIY picnic outside the Monument after dark.  You may want to back up your photos to the cloud before the equipment gets re-appropriated.  The area around the monument basically turns into a dogging site after dark.  Sorry to be so crass, but it's the truth.

I'd stick to organised picnic dates with the Monument.  Those are well organised and well attended.

As for rides, the gravel road to the Nature Reserve is chill, safe and has great views of the valley. Then there are the gravity lines at and around the Monument. Difficulty varies from very mellow to expert only.

Now this sounds really good.

The idea would be to ride, then head onto the "formal" picinic and star gazing/photographic thing at the monument.

They have a date for star watching on the 11 November. Does this sound like a good date?
