I have found that our budget is about 33% of what it used to be.

 

But we don’t use meat replacements( if we do we make our own using a homemade Seitan) and we shop seasonal.

 

Seasonal veg plus a good understanding of spices has been a game changer for us.

 

Happy to share recipes and methods.

I am a huge fan of Indian, Mexican and Mediterranean style dishes.

 

Last night was a crispy tofu laksa bowl.

 

How about I post my dinner every night and if you dig it, I’ll post the recipe? If you think it’s rubbish, lie to me and tell me it looks awesome anyway.

Disclaimer * I am still souther hemisphere so our seasons won’t line up. Seasonal shopping is the key to reducing costs.

 

For example, a 700gram bag of tomatoes costs $10 in winter but $2 in summer. Avos are currently two for $4 but can hit highs of $11 each out of season.

Mushroom, bean and spinach quesadillas. Tiny bit of angel food cheese(vegan cheese). The cheese is totally not necessary. Basically cook up mushrooms, garlic, spinach and beans and shove it in a tortilla and toast the tortilla.

 

On the side are some roast potatoes in a taco spice.

 

Cover the quesadilla with smashed avocado and garnish with some homemade pink onion pickles. I have also lashed the potatoes with a chipotle and Carolina reaper salsa (also homemade)

Noted thanks, will be trying to get some recipes together in the next week and then go from there.

 

Why not just drop more meat then or are you struggling to balance your nutrition?

I managed to drop meat entirely for about 6 months, without too much effort.

My partner however does not fully share my views about cute little pigs, and she started to wane.

 

But I’m going to try and get her/me back onboard with the man, women, TV, sorry I mean, meat, chicken, fish approach. That’s a good idea.

 

So my challenge is not nutritious or will thing, it’s a buyin thing.

Having said that I did put on a little weight, I struggle to stat away from the starches to be honest. Cheese/eggs could help here. (I have no desire to go full veganist)

Ah yes, that can be a challenge, any lifestyle change can be challenging when there’s different views or needs going on.

 

Yeah I don’t see eggs, milk and cheese disappearing for us anytime soon either.

We started looking at eating less animal products and then going vegetarian this year.  I can't just stop eating animal products but have to phase it out due to a few health problems.

 

We did a meatless Friday last week and made the epic mistake to try Denny Patties (https://www.denny.co.za/single-post/2020/09/28/beef-style-mushroom-burger) for our Friday Burgers.  What a big mistake.  Remember where I said I have to take it slow...  Well my body decided to reject the burger and the patty.  Most of Friday night and Saturday was spent being sick.

 

Going vegetarian again will not be such a huge problem for me.  But not sure how my shortened gut will like the change.

I love those Denny patties, its been over a year since I ate meat though so they dont cause my wife or I any issues.

Mushrooms work well in those patties because they dont dry out and they are quite filling.

I think we just got a very bad batch then.  But then as I said I have a very fine line to walk in what I eat.  Last night we had Quinoa with some fetta cheese, green pepper and King Oyster mushrooms.  Was a very filling meal for me.  The mushrooms did not effect me at all.  And it did not rush out of me in less than two hours.

My wife and I are vegetarian, vegan is just a little too much of a stretch although most of the time our meals are vegan.

 

We still use eggs and dairy but are very selective of the brands, with both the eggs and dairy we have visited the local farms and they are both properly free range with owners who care about their animals.

 

Macadamia milk is actually really nice in coffee so we have switched over to that instead of milk, but still use milk for other things.

Yup, its a very delicate balance with colon issues, my father in law went through the same thing and he had to avoid most spices and any food that could set things off.

 

All vegetables are high in fibre so try stick to fresh green veg as much as possible.
