If you eat the same calorie value in protein vs sugar there is a major difference because of how it absorbs in your body. Eg. the effect it has on insulin. Dairy (like cottage cheese) also has a big effect on insulin and I wouldn't suggest it for your goal.

Why is optimum better? Because it cost more and comes from the US where the guys can claim what on earth they want on the label?

I had XTR 26" wheelset. It was AWESOME. And I will buy them again.

I have 2 X 10 and the lack of granny was tough in the beginning but now I hardly use my 1st gear on the casette. What I DO miss is a bigger ring for flats with the wind behind you and non technical down-hills. Spinning like some of the tannies at vrigin active till you almost bounce of the saddle is nawt fun IMHO.
