I know this is an open ended question, but do you recommend I run it to "blonde stage" and stop the shot even if i get short of a double?

Factoring in time of course - wont stop it at 15 seconds!

What do you want? good taste or volume? me I would go with taste.... volume be damned..... as long as it's not hugely out.... unless you are trying to pull ristretto's or something, because then the numbers are different, as well as the pour times.

Do an experiment - take 3 espresso cups, and put the first 3rd of the pour in 1, the middle third in the next, and the last third in the last cup - you can even do this with more cups too - just make sure what you have in the last cup was all blonde during the pour - then taste them individually... to see if your tastebuds care about the blonding or not - and remember, adding milk hides a finely defined taste, and sometimes harsher tastes work better - so within some small boundaries, you can get away with a lot when you add milk - and uninitiated coffee drinkers are VERY unlikely to notice the difference in taste - they have nothing to compare it to...

Espresso drinkers on the other hand tend to be a fussier lot... :)

I have a method. If I'm not happy with the shot it automatically becomes a cappuccino, If it was good enough - it's an espresso. :) (When brewing for myself) :)

My method is to give the first one to the wife - with milk... thereafter if it goes wrong, goes in the sink, unless wifey is looking for another one... in which case guess where it goes... :)

When entertaining, I always do everyones first - as fast as possible - nobody gets a capp made with a double....if I have more than about 6 to make, I don't even bother trying to pour art, flat white only, maybe the odd heart, then I do mine.... fussy friends can do their own....

The guy i bought it from said it was dropped when the courier came to collect it. He refunded me.

I would have rather had the machine as it was a Rancilio Silvia for an amazing price...

Anyway this is where i am now ha ha

My philosophy too..

Guests getting a double?? Unheard of!! Half of them will think it's too strong anyway. :)

I am more worried they will put sugar in it... and spoil it no matter how good it was.... :(

Had a friend come around to help me with a dstv installation. Chap I cycle with.

I decided to treat him and made what was perhaps my best ever cappachino. I handed him his waiting for a reaction. He took a sip and then he looked at me and said he was more a Ricoffy man!!!.

Could have smacked him.

I saw a very nice selection of coffee machines at a place close to the Builder's Warehouse in William Moffat str. It is on the right just before you get to the traffic light, next to the Garage on the corner when traveling down William Moffat. They had machines from R699 up to R 25k. There is another coffee machine supplier in PE, but they generally only do the industrial machines for coffee shops and such.

Try Masterton's in PE for coffee...they are ok, not super. Their coffe is cheap though, and fresh.

In the middle of Moffat-on-Main there is also a coffee shop that sells some really good grind, I always buy from them when I am in PE. If you ever head to Humansdorp you can pop into Le Chameleon, they roast their own beans there...

Second vote for Masterton's!

Made my old training partners wife a cappa - double Rosetta, complete work of art... and she dumped 6 spoons of sugar in - without even tasting it....

Training partners face was a picture... think he was just reflecting the look on mine...

After that she got downgraded to my wifes super auto coffee...
