The one thing scaring the @%@$% out of me about the Urban MTB Assault course, have never ridden floating bridges before, and I don't want to engage submarine mode.

Like Captain says keep on pedalling, but make sure you leave enough of a gap between you and the person in front of you. the worst thing you can do is catch up to the person in front while on the bridge as the weight will result in both of you going down, plus this way you have enough time to react if something happens to the guy in front.
