Quick question - is it the grind on demand mdx or the one with the hopper?

It has a hopper. A very big machine. I use a scale and measure out an exact amount of beans and just chuck that in. It is fairly stable and has a stepless adjuster. I do tend to slowly make adjustments over time and even make quite accurate changes depending on humidity.

Keen to hear "what" water you guys are using in your machines?

My machine came with water test kits but I've yet to use them. I've been using water filtered with a Brita, is that required for Cape Town water though?

Going to test water tomorrow in any event.

The bigger H2O intl filters produce really outstanding water, not sure what difference it makes with coffee though, I don't have one at the moment.

Definitely need filters - but somehow I don't think a brita jug is good enough - rather use a speciality filter set for espresso.
