Made a lovely twist on mashed potato ...

 

Add 50/50 cauliflower, cup of buttermilk, tablespoon cumin and some cumin seeds that you roast first ...

 

Worked well with nice mustard steak and wheat-based salad :-)

Tell us more please!

My wife is italian, so I based it on an italian recipe.

 

Boil tripe (+- 1kg) in water with onion, bay leaf and corriander seeds for about 1.5 hours. This is the stinky part of the process and the reason most people wont eat tripe. Make sure your kitchen is well ventialted or do it outside.

In your potjie saute onions, carrots, celery and garlic.

Once done, add the boiled tripe; white wine (about half a bottle); tin of italian tomatoes; cup of chicken stock; bay leaf; rosemary; nutmeg; tin of tomato paste; tin of chick peas (or 2) and potato.

Season and cook slowly for about 2 hours. Ideally the poptato must break up a bit and thicken the sauce.

When done add chopped parsely and a bit of cream (optional)

voila

 

EDIT. Forgot to say: after boiling the tripe, slice it into strips.

Shot! May give it a go this weekend. Will have to lie to my son about what it is… :whistling:

 

Once, when Breandan was little, he asked me what I was cooking.

Does anyone have a killer Mac and cheese recipe?

 

Here you go brother, easy as pie, without having to make a white sauce:

 

500g macaroni

 

200g assorted tomatoes, quartered

 

2 sprigs of thyme

 

2 Tbsp olive oil

 

Salt and pepper to season

 

1 cup cream

 

1 cup milk

 

3 eggs

 

250g mature cheddar, grated

 

Parmesan cheese, grated

Method:

1. Preheat the oven to 180ºC.

2. Cook the macaroni as per the packet instructions, strain and set aside.

3. Toss the tomatoes and thyme with olive oil, season with salt and pepper and roast on a

baking sheet for about 20 minutes. Set aside.

4. Whisk together the cream, milk and eggs. Season with salt and pepper.

5. Toss the pasta with the cream mixture and add about ¾ of the cheese. Pour the pasta into

a baking dish. Top with the remaining cheese and bake for 20 minutes.
