Probably cheapest is to get a speed and cadence sensor. Then record the workout with your apple watch and at the same time using your phone recording to strava directly via the app, with the speed, cadence and HR connected to your phone. The apple watch sends the HR data to vitality for the points. Direct recording of HR, speed and cadence via your phone and the strava app for distance and other info. You will likely have a duplication of workout as you will be recording directly through the strava app via your phone and also the data will be sync'd from your apple watch, so will need to delete the sync'd workout on strava.

Here a real life monitoring of HRV, having had Covid myself at the end of May 2021 and recovered from it. I have highlighted in the red oval, my HRV recovery point spiked before dropping to its lowest reading in the last 3 months whilst suffering with a fever for 2 days. After the 2 day fever broke it was like recovering from a heavy flu until around day 10. You will also see my Resting rMSSD dropped drastically and only from the 4 June 2021 did my HRV start to recover and the rMSSD thereafter. You can also see my Resting HR rising just before and then starting to slowly return to normality as the recovery took place.
